Wholemeal bread with nuts and seeds
This is a delicious bread with all the goodness of whole meal, nuts and seeds. I usually add a nut mixture with walnuts, pumpkin seeds, sunflower seeds and sesame seeds (whatever in stock.) You can use any combination of nuts you like.
- Bread Flour 300g
- Wholemeal Flour 300g
- Butter 1 tablespoon
- Salt 1 teaspoon
- Sugar 2 teaspoons
- Dried Yeast 1 tablespoon
- Warm Water 400- 450 ml
- Mixed Seeds and Nuts 200g
- Mix Strong white flour, whole meal flour, salt and sugar in a bowl.
- Dissolve yeast in warm water and leave for ten minutes to ferment.
- Make a well in the middle of the flour, add yeast water mixture and soft butter .
- Mix all together to make a dough. (Adjust the amount of water to get a soft dough, the amount of water needed may vary according to the flour you use.)
- Turn the dough out on to a lightly floured work surface and knead for ten minutes until smooth and elastic.
- Leave it to rise in a lightly oiled bowl, covered with a damp tea towel or cling film for one hour until it has doubled its size.
- Knock the dough back and knead in the seeds and divide the dough into four.
- Shape the dough and place on a greased baking sheet.
- Cover with tea towel and leave to prove, (rise) for 20 – 30 minutes. Dust with flour and score with a serrated knife on top.
- Bake in a pre heated oven (180 °c) for 25-30 minutes until it is golden.
- Cool on a wire rack.
