Prawn and Vegetable Noodles
This is a perfect dish which I cook when I am looking for something to satisfy everyone in the family. It is almost fast food but nutritionally perfect: carbohydrates from the noodles, protein from the prawns and vitamins and minerals from the different vegetables. If you are looking for a vegetarian option just substitute the prawns with fried tofu.
Prawn and Vegetable Noodles
- Oil 2 tablespoon
- Ginger (chopped) ½ teaspoon
- Garlic (chopped) ½ teaspoon
- Onion (sliced) 1 cup
- Carrot (shredded) ½ cup
- Cabbage (shredded) 1 cup
- Spring onion ½ cup
- Prawns (peeled) 250g
- Egg noodles (cooked) 500g
- Pepper powder ¼ teaspoon
- Soy sauce 2-3 tablespoons
- Sugar 2 teaspoons
- Toasted sesame oil 1 tablespoom
- Salt
- Heat oil and sauté ginger and garlic until fragrant, add all the vegetables except spring onion and sauté until cooked.
- Add the peeled prawns and cook for a few minutes, then add the cooked noodles, spring onions, pepper powder, soy sauce and sugar. Mix all the ingredients well and check the seasoning (add more soy sauce or salt if necessary -the strength of the soy sauce varies according to the maker so please adjust the seasoning accordingly)
- Mix with toasted sesame oil and serve hot.
Loved this. Only alternative that I took was use chicken sausages instead of prawns, fried it before hand and then added it to the (saute)mix. 🙂
