Roasted parsnip with spices
Parsnips are tubers that look like white carrots but taste completely different!
This is the time of the year in which parsnips gets sweeter as the weather gets colder and more frosty.
The preparation and cooking is very simple and easy. Simply peel and cut the parsnips into quarters. Mix the pieces with a tablespoon of vegetable oil, salt, a couple of bay leaves and a teaspoon full of mixed spice powder or curry powder. Spread it evenly in a baking dish or frying pan and roast in a pre-heated medium oven for 20-30 minutes until it is cooked through and the edges are golden in colour.
I have used a mixture of spices from my spice box – a pinch each of chili, coriander, turmeric and garam masala powder. If you have a favourite brand of curry powder, you can use that instead.
Serve warm with any grilled meat or fish. They are a great alternative to roasted potatoes.
