Carrot and orange salad with mint and cinnamon
It is finally summer salad time! There are certain foods that evoke memories and this one always remind me of my trip to Morocco!
It is extremely simple to make:
Peel and coarsely grate two medium carrots. Mix it with a peeled and thinly sliced juicing orange, a dash of cinnamon powder, lemon juice, a few fresh mint leaves and some sea salt!
Serve it with a crusty warm bread roll on a hot summer day and I am sure you wont regret making it!
