Date and Walnut Cake
An old fashioned cake, which is an all time family favourite of mine. It is extremely simple to make, and goes perfectly with a cup of tea.
Date and Walnut Cake
- Unsalted butter – 150 g
- Castor sugar – 150 g
- Eggs – 3
- Plain flour – 150 g
- Baking powder – 1 teaspoon
- Vanilla extract – 1 teaspoon
- Dates – 100 g
- Walnut – 100 g
Method
- Sieve plain flour with baking powder.
- Cut dates and walnuts into small pieces.
- Whisk soft butter and sugar in a bowl until the mixture is pale and creamy.
- Add eggs one by one and whisk until the batter is light and fluffy.
- Add vanilla extract and whisk until combined.
- Add half of the sifted flour, fold in with a spatula until well combined.
- Add dates, walnuts and the rest of the flour, fold gently until the mixture is uniform.
- Pour the cake batter into a buttered mould and bake in a pre-heated oven (180°C) for 30–35 minutes, or until the cake is cooked through.
- Cool the cake on a wire rack and remove the cake from the tin when it is slightly warm.
- Dust with powdered sugar and serve
