Avocado and tomato salad with Chilli mayonnaise

 

It’s been very quiet in manjuskitchen in the past few weeks, apologies for that. I was in India (Kerala). It wasn’t a holiday… I went back to see my father, he is in the hospital after a massive stroke and I was there for a week with my family and then I had to return.

I have to admit after coming back it has been pretty hard for me to cook and think about food… I was doing just the minimum to feed my kids who were busy with exams but very slowly my father is getting better and I am getting back to my cooking mode!

 

 

Avocado and tomato salad with chili mayonnaise is a recipe I have wanted to share for a long time.

 Avocado is considered a health food, as it is very high in vitamins, minerals and fibre. They have 35% more potassium than bananas.  They are also known as being a very high calorie food, however – this is because avocado contains a lot of monounsaturated fat, which makes up 75% of calories and this is actually very good for you.

Make sure you buy avocados a few days ahead and place them in a paper bag and leave them at room temperature to ripen. They are ready to use when they yield to a gentle pressure. The flesh turns brown quickly after exposure to air so to prevent this, mix it with lime or lemon juice as soon as it is peeled and cut.

This gorgeous salad has such unique flavors and textures. Avocadoes, tomatoes and chili mayonnaise – something I make when I have ripe avocados ready in hand… 

To make the chili mayonnaise simply add your favorite chili sauce to the plain mayonnaise and mix well until combined. The chili sauce adds flavour and a very subtle kick to your ordinary mayonnaise and makes this salad very special… It is very simple, healthy and quick and easy to make, just make sure you are not too generous with the chili mayonnaise – a little goes a long way….  

 

 

 

Chilli Mayonnaise

Egg yolk-1

Lemon juice-2 teaspoon

Yellow mustard paste-1/2 teaspoon

Salt-1/2 teaspoon

Vegetable oil-150-200ml

Chili sauce

Method

  • Mix egg yolk with lemon juice, mustard  and salt in a bowl.
  • Whisk in oil slowly (add little by little and whisk in) until you get a thick mayonnaise consistancy.
  • Add enough chilli sauce for flavour and whisk in.

Avocado -1

Lemon  or lime juice-1 teaspoon

Salt-1/4 teaspoon

Cherry tomatoes

Chilli mayonnise

Method

  • Peel and cut avocado into wedges, mix with lemon or lime juice and salt.
  • Mix the avocados with cherry tomatoes and serve with chilli mayonnise.
