Apple and Rocket Salad with red onion dressing
I must admit that it has been quite a while since I made any salads this year. I think the cold and dark weather was putting me off from them.
It is very interesting how our food cravings change when the temperature goes up a few degrees and the skies turn bright and blue. I am not complaining… we all wait for these bright sunny days all year along.
I have to admit that this is the way I normally cook – I look at what I have or what is in season and decide what to make. I had a few red apples in the fruit basket and a bag full of green and peppery rocket leaves. I cut the apples into thin strips before I tossed them with the rocket leaves.
The dressing is a simple one; lemon juice, honey, olive oil, salt, white pepper and some chopped red onions, all mixed together. You can use white onions if you wish but I prefer the red ones for their sweet intense oniony taste . The dressing turns into a beautiful pink colour as it matures, and the flavour intensifies as well. You can leave the dressing in a cool place for a couple of days. I usually make more dressing than I need, and I leave the rest in the fridge. It tastes delicious served with grilled fish or as a dressing for a quick lunch salad.
Red Onion Dressing
Chopped red onion -1/4 cup
Lemon juice – 4 tablespoon
Honey -2 tablesoon
Extra vergin olive oil-3 tablespoon
White pepper powder
Salt-1/2 teaspoon
Method
Mix all the above ingredients together to make the dressing.
Serve mixed with apple and Rocket leaves.
