I am a big fan of frozen yogurt and these days, stalls are popping up everywhere. They sell various flavours, such as green tea, apple and chocolate, all of which you can top off with your choice of toppings but I like to have mine plain with the simple yogurt taste. People prefer frozen yogurt to ice cream because of its healthy image. I have been trying to develop a recipe for frozen yogurt for the past few weeks and I tried many different combinations. Finally I found the magic ingredient, which gave my frozen yogurt the perfect taste I was looking for … lemon juice.
I use an ice-cream machine to churn the frozen yogurt but if you don’t have one simply mix everything together and keep it in the freezer until set in an airtight container. (If you mix the mixture in between the freezing process, it will help you to get a smoother texture for the frozen yogurt). Remove from the box when its ready and cut it into blocks with a knife or defrost slightly and scoop out with a spoon and serve. Fresh fruits add a delicious topping for this healthy cool dessert.

- Sugar 75 g
- Water 75 ml
- Greek yogurt 300 ml
- Vanilla extract ½ teaspoon
- Lemon Juice 2 tablespoon
- Boil together the sugar and water to make a simple sugar syrup and cool.
- Mix the cold sugar syrup, yogurt, vanilla extract, and lemon juice in a bowl.
- Pour it into an airtight container and freeze, (mixing in between to get a smooth texture) or churn in an ice-cream machine.
